			<content:encoded><![CDATA[<p>I love the simplicity of a Court Bouillon. For me, it is a quintessential method for preparing fish, and I use it often for tilapia, basa, and salmon.  It&#8217;s a simple and fairly fast French preparation that works well with most fish and seafood.  Below is the Court Bouillon that I have developed and use in my cooking.  Here&#8217;s what you&#8217;ll need:</p>
<p>2-4 fish fillets (depending on size of pan)<br />
3 tbsp olive oil<br />
3 cloves garlic, smashed<br />
1/2 small onion, sliced<br />
1 tbsp dried thyme<br />
3-5 cilantro sprigs<br />
3-5 dill sprigs<br />
1 cup white wine<br />
1 cup water (or chicken stock)<br />
2 bay leaves<br />
1 tbsp peppercorns (or coarse black pepper)<br />
1 lemon<br />
Salt<br />
Pepper<br />
Begin by slicing your fish fillets in half if they are large and salt and peppering both sides of each.  Add the olive oil to a pan and warm it over medium heat.  Add the onion and garlic and sauté until the onion is soft and both are fragrant. Add the dried thyme and stir it around in the oil to spread it throughout the pan.  Add in the dill and cilantro (or parsley if you&#8217;re a cilantro hater) sprigs and allow the to sauté until fragrant. Be sure to move them about a bit as you don&#8217;t want them to burn or heavily cook in the oil.</p>
<p>Once everything is fragrant, it&#8217;s time to add the poaching liquid.  Add the wine and then the water (or chicken stock) and stir.  Allow the liquids to simmer for about a minute and then add the bay leaves, peppercorns, and lemon juice.  Stir the contents of the pan and allow it to come to a heavy simmer.  At this point, turn the head down to medium-low and add in your fish filets.  Cover the pan and poach the fish for about 10 minutes or until done.</p>
<p>The fish is ready to serve!  I like to serve it with a sauce like a Dill and Dijon Vinaigrette.  Oooh!  That sounds good!  How do you make that?</p>

			<content:encoded><![CDATA[<p>&gt;After watching the debate, the recent occurrences on the financial disasters (inevitable), trying to understand what would happen if Sara Palin ever became President, I decided it was time to do two things – First PRAY!!!</p>
<p>Second, a glass of a good wine has always helped to calm you down – yes I believe you can pray and have a glass every now and than.</p>
<p>My last trip to Brazil I happened to taste some great wines.  While I am by no means a connoisseur or sommelier, I happened to know what I like.  I like wines that have a taste to them. That stands up and justify themselves. Most important thing is that they don’t give me headache in the morning (either from drinking too much or costing too much!!!!!) Not opposed to buying good wines, but as an EverydayGuy, I always have a cost/performance ratio running.</p>
<p>So let me tell you about three wines that I found and fell in love with (all are from the Miolo Family):</p>
<p>Miolo Reserva Cabernet Sauvignon &#8211; Cabernet Sauvignon<br />
Safra 2006. Great Red Stand up against any wine in the $15-25 range. At about $6-10 USD a bottle, it is a great buy.  They even have reasonable prices in the restaurants.</p>

<p>Miolo Lot 43 2004 – Cabernet Sauvignon – Here is a wine that I put against some of the Bordeaux that I love from France.  This wine is exceptional and in limited supply.  I do not believe it is available in the states.  It is in limited supply in Brazil (one available per Citizen – they actually ask for your Brazilian CPF – that also means if you can afford it). At $30-35 dollars a bottle, it is a steal!!!  Almost worth the flight to Brazil.  Find a friend that can get you a bottle if you are not able to make the trip&#8230;</p>

<p>Miolo Fortaleza do Seival Pinot Grigio 2008. – Now for those of you that like white wines, I happen to like drinking this one. It is about the same price as its “brother from another mother” Reserva Cabernet and has a lot of body for a Pinot Grigio!  Love it, great bottle even with cheese, dessert.</p>
